This is the final day before I take on the monumental challenge of eating nothing but organic food for 40 days.
On one hand, I am looking forward to getting started. On the other hand, I realize that this is gonna be really tough.
I suppose I shouldn't complain. In a real emergency, I wouldn't have time to prepare mentally for giving up my normal diet. In an emergency, most people wouldn't have 40 days of food on hand, let alone 40 days of balanced, organic, vegetarian meals and snacks.

For Christmas dinner, I had steak and lasagne.
And make no mistake, this strict adherence to ONLY organics for 40 days will be a serious test of my will power.
I just opened the S2T bucket, and after looking at the picture of the steak and lasagne, it really doesn't look all that appetizing. But what can you expect for dry food with a 20 year shelf life. I guess when you compare it to some of the other long term food storage, it doesn't look half bad, but when compared to Christmas dinner, it leaves a lot to be desired.
After a great deal of thought, I think I will not limit myself as much as I had originally planned. Rather than only eating the contents of the S2T pail and organic eggs... I will also allow myself any of the organic supplements available from Freshwater Organics, plus organic coffee, and maybe some other occasional organic treats like spinach, carrots, or maybe even some elk or beef if I can find any. I also might have some organic wine once in a while - though most of the organic wines I have tasted in the past have tasted like crap. So maybe I will just dry out. No promise... I'll just play it by ear. The reason for the change is not because I don't believe that the S2T will provide enough nutrition... but rather because to be realistic, if I were in a survival situation or in a food crisis situation, I have loads of "barter items" that I have been saving for years, and if offered elk or organic beef (or if I had some in the freezer that might spoil due to no electricity) I would most certainly eat it. Besides, I will not be indulging at every meal, but I just don't want to restrict myself too much, so that it isn't fun. I will still be consuming all the contents of the S2T pail, and if I eat a little more for pleasure - not subsistence - where's the harm in that. I will be showing you film or stills of everything I eat and drink. I welcome your comments, feedback, and suggestions.
I will also be working out a little throughout the course of the review. We just got another dump of snow, so maybe I will even do a portion of the test from a snow cave... no promises, but I think it would be interesting to see some of the meals prepared in extreme conditions. I will prepare and consume many of them from an RV, but I may also do 3 or 4 days in the mountains in a snow cave - if enough folks are interested enough to motivate me in that direction. In the event that I do go out in the mountains for a few days, the challenge will be to find a spot where I will still have cell service so that I can update the blog from there. I may not be able to upload video until I return, but at least I will be able to upload daily updates.
